• Source of Raw Materials: The bio-conversion method for producing Reb M uses Reb A, which is extracted from stevia leaves grown and harvested in traditional agricultural cycles. Alternatively, fermented Reb M is derived from non-stevia leaf raw materials. These materials are processed through precision fermentation to produce steviol glycosides, which are then further converted into Reb M through multiple steps.
• Enzyme and Yeast Usage: In the enzymatic conversion process, enzymes are employed solely as processing aids and are completely removed from the final product. On the other hand, the fermentation method utilizes yeast as a raw material. This yeast remains present in the final product and cannot be eliminated. As a result, bio-conversion Reb M is certified as NON-GMO, whereas fermented Reb M cannot achieve NON-GMO certification.

Using fermentation or bioconversion to produce Reb M significantly reduces its environmental footprint compared to direct extraction from stevia leaves. However, because bioconverted Reb M is made from stevia leaf, it is the only type that directly provides livelihood to stevia farmers.
